    The ground coffee “Holler Mountain” is just right for filtering
    The ground coffee is good! This Stumptown Holler Mountain coffee (Stumptown originated in Portland, OR ~ thus, “Stumptown”) is wild, fragrant, sweet, deep and fantastic. I don’t have a grinder and depend on the ground beans in stores without public grinders. It’s one of only two Stumptown varieties that are sold ground.

    Good Change of Pace
    Taste is like beauty, it’s in the eye of the beholder. What may taste good too me might not taste good to another. I like my coffee with cream and sweetener. The first brew through with Stunptown Hairbender I was underwhelmed. The coffee barely covered the taste of the creamer. I was pretty disappointed. The next day o brewed it stronger and that changed the whole thing. It was really good and a joyful change of pace. For me it’s very earthy meaning it tasted a little pine desert sage after a rain. What I realized is it doesn’t have the bite of the bitter burnt mass produced coffees. I’ll buy again.

    Great taste but lighter brew
    We enjoyed this coffee. It taste great and does not have an acidic taste. The only thing that I personally did not love is that it’s not a very medium or dark roast flavor. I would consider this a light roast flavor. If you enjoy light roast, this is for you, however, if you enjoy a bolder cup of coffee isn’t for you.

    Chocolate and Caramel tasting notes
    I’d first like to put up a disclaimer that the coffee’s taste varies greatly on how you brew your coffee. While this is an excellent choice for espresso shots and even better for lattes, my favorite is as pourover or through aeropress.
    Pourover and Immersion process at the right temperatures (between 180 °F – 195 °F) give an optimal amount of flavor. Some people might have mentioned that it’s less sour, but that’s usually due to the amount of carbon dioxide in the coffee still. During the roasting process as the bean itself begins to carbonize, it generates CO2 which stays trapped within the bean slowing trying to get out.
    This is why there are one-way valves on the coffee bags to allow CO2 to escape.
    With that in mind, your coffee will vary depending on a while variety of factors.
    * Time since roast
    * Water temp
    * Immersion time
    * Espresso vs Pourover vs Immersion vs etc
    * James Hoffmann’s revised pourover process
    * James Hoffamnn’s old pourover process
    * Was the coffee brewed within 30 seconds of when it was ground?
    * How much water did you use vs the amount of coffee?
    * Is your scale calibrated
    * Did you rinse your paper filter?
    * Is your V60 or Immersion container preheated?
    And the list just keeps going.
    Typically folks with sour coffee are experiencing under extraction, so that means hotter water, or long extraction. People who are tasting mild coffee that lacks flavor and depth, you need to fix your ratio to get more coffee into the filter.
    Now with the preface out of the way, this coffee is delicious. A cup pour at just about ~10,000 feet in the Sierras (Laurel Lakes, Inyo National Forest) from an Aeropress 2:30 brew time, yielded delicious coffee with hints of caramel and chocolate. I don’t know what Stumptown did, but this was the most flavorful cup I’ve had with this. It’s definitely possible that coffee brewed at high altitudes will also evaporate faster releasing more flavor during a sip, so your mileage may vary.
    Just keep in mind, I was very happy with these beans. They’re very high quality and exceptionally delicious.

    It reminds me of break room coffee from my temp working days.
    I had always wanted to try StumpTown coffee because of its reputation but it’s always been so pricey. Finally, I saw a deal and even though it wasn’t a dark roast (Hair Bender), I decided to take a chance. And I did. It’s just not that great. It has a bitter taste and doesn’t have the rich aroma for a French Roast or Espresso blend. Maybe I’m just a dark coffee snob? All I know is that this coffee is this coffee brings back memories of me working depressing temp positions right after college (the days before wifi) with lots of filing papers and depressing break rooms with stale coffee. But….because it’s a food product, I’m stuck with it.

    Stumptown Grinds? Really?
    The first few scoops from the top of the package were typical Stumptown–made great-tasting coffee.
    Then, something bad happened. The rest of ground coffee in the package had no flavor.
    One star.
